Albondigas Soup

Albondigas soup…Yummy Mexican soup!!! I love it and can advice it for every occasion. As a starter for a dinner with friends or as a main dish. Albondigas soup has a rich tomato taste and the combination of meat balls with fresh mint is just incredible.

Ingredients for Albondigas soup (6 portions)

  • 2 carrots
  • 1 big onion (use a half of it for meat balls, another half for soup base)
  • 1 zucchini
  • 600 gm forcemeat (beef)
  • diced tomatoes – 1 can
  • 1 tbsp of rice
  • 1 garlic clove
  • 1 egg
  • 2 tbsp of dried basil
  • fresh mint -5-6 leaves
  • 1 tbsp of olive oil
  • 6 cups of still water
  • salt
  • pepper (black,cayenne)

Albondigas soup – Meat Balls

Mix forcemeat with 1 egg, rice, 1 tbsp of basil, chopped of half of onion and mint leaves, salt and black pepper. Form medium-sized meat balls.

Using blender, mix diced tomatoes, garlic clove and half an onion, till you get a perfect tomato sauce. Using a deep pot, place 1 tbsp of olive oil and tomato sauce and cook for 5 minutes on a low heat. Add 6 cups of water and cook the sop for 10 minutes. Add meat balls and cook for another 15 minutes. After the meat balls are ready add carrots and potatoes, cook till the vegetables are completely ready. Add salt, black and cayenne pepper (depending on how spicy you want your soup to be), 1 tbsp of dried basil and zucchini. Cook the soup around 10-12 minutes, till zucchini is ready. And here you go with the great Mexican Albondingas soup!
