Kartoshka dessert

Kartoshka dessert

Sometimes I really miss things from childhood. These chocolate balls, so called Kartoshka dessert, you can easily find everywhere in Russia, but here in Germany it is a challenge. So there is just one way to feel ‘the taste from childhood’, baking by yourself. Actually home-baked ones definitely taste better, than many of purchased in the supermarket. Here is a recipe for those, who want to try one of the most famous russian deserts.

  • 150 gr. sugar
  • 120 gr. milk
  • 60 gr. butter
  • 145 gr. flour
  • 20 gr. cacao powder
  • 7 gr.baking powder
  • 3 eggs
  • salt

  • 100 gr. butter
  • 50 gr. sugar
  • 40 gr. cream (not less than 20% fat)
  • 1 tea spoon of vanilla extract
  • 80 gr.  hazel-nuts

Whisk together eggs, sugar, milk and butter, set aside. Whisk together flour, cacao powder, salt, backing powder and set aside . Whisk together both mixtures (add flour mixture in 2 parts), use spoon, so the mixture will stay fluffy. Fill the baking form, bake the dough in a preheated oven for 30 mins (200C). Leave backed dough for 5-6 hours, that it will get totally cold. Prepare cream. Whisk cream and butter, heat it, so the butter is dissolved. Using electric mixer, mix liquid mixture with sugar, add vanilla extract. Chap hazel-nuts, chap cake and whisk together with prepared cream, till you can make a ‘ball’ out of the mixture. Divide it to small balls and leave them in the refrigerator for 5-6 hours.
