Are you getting ready for Halloween? If not, it is perfect time to start now by cooking pumpkin ginger soup. It is so tasty, but what is even more important it is extremely easy to cook. So even if u are not used to cook, you will get it done perfectly.
- Ginger (root) – 3-4 sm.
- Pumpkin – 500 gm.
- 1 Onion
- 2 Carrots
- Olive oil
- Cream ( not less than 20% fat) – half a glass
Using a big pot, place 2-3 spoons of olive oil and chopped onion. Braise onion, add squeezed ginger (3-4 sm.), add sliced carrots. Braise for around 5 mins, add 5-6 table spoons of water and braise another 10 mins. Add 500 gm. of pumpkin (chopped into medium-sized squares), add it to the pot and add water (or vegetable stock) to cover pumpkin. Cook for 20 mins. After all vegetables are cooked, purée with a hand blender. Add half of a glass cream to the soup and make it boil again. Here it is!!! Ready!
